The Seven Species are agricultural products whose first fruits of the season were the only acceptable offerings in the Temple during ancient days. Kabbalists also explain that there is a deeper significance to these fruits that correspond to the seven divine attributes.

Wheat: Kindness

Barley: Severity

Grapes: Harmony

Figs: Perseverance

Pomegranates: Humility

Olives: Foundation

Dates: Royalty

Today these significant grains and fruits are traditionally eaten on Tu B’Shevat as a way to celebrate the New Year of the Trees and the bounty that they give us. These species are also special because of their connection to the Land of Israel, and are considered unique since they provide necessary nutrients for us to live.

The sweet fruit and honey combined with the heartiness of the flours make these muffins a great option for breakfast or snack. They are light and easy to make, and full of unique flavors that you don’t normally find in muffins like the pop of pomegranate seeds and sweetness of the figs. You might want to make a double batch, because these go pretty quickly in my house.

Seven Species Muffins

Ingredients

  • 1/2 cup honey
  • 1 tsp vanilla
  • 1/2 cup unsweetened applesauce
  • 1/4 cup extra-light olive oil
  • 2 eggs
  • 100 grams dates – depitted
  • 80 grams dried figs
  • 80 grams raisins
  • 80 grams pomegranate seeds
  • 3/4 cup barley flour
  • 3/4 cup whole wheat all purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt

Directions

  1. Heat oven to 350°F. Lightly coat a muffin tin with cooking spray.
  2. Roughly chop the dates and figs – about 1/4 inch pieces.
  3. Mix honey, vanilla, applesauce, oil and eggs in a large bowl. Stir in the chopped dates, chopped figs and raisins.
  4. Mix the flours, baking powder, baking soda and salt in a separate bowl. Add this mixture to the wet ingredients and mix well to combine. Gently fold in the pomegranate seeds.
  5. Pour the batter evenly into the greased muffin tin and bake for about 20 minutes until toothpick comes out clean.
